Absinthe Bovet La Valote
Who : Françoise Bovet
Where : Rue de la Gare 5, 2112 Môtiers
Website : absinthe-bovet.ch
Françoise has known the clandestine hours of her father Willy Bovet. From 2010, he patiently passed on his know-how to her. Her absinthes are produced by hand, and she still often harvests her absinthe plants in the fields herself. Pure craftsmanship, from field to bottle. One of Françoise’s stills dates back to Prohibition and is still in use.
Absinthe La Valote Martin
Who : Philippe Martin
Where : Rue du Nessert 3, 2108 Couvet
Website : absinthe-originale.ch
Philippe comes from a family where both men and women have been distilling for more or less 100 years. In 2014, after helping his father with tours in German and English, he left the multinational company where he worked and took over the distillery. In 2025, he moved his distillery to Couvet, in the former stable of the Pernod family, who popularized absinthe on a large scale in the 18th century.
Absinthe de l’Herboriste
Who : Pierre-André et Cosette Virgilio
Where : Grand-Rue 20, 2114 Fleurier
Website : Facebook
As Pierre-André puts it, “it’s a pleasure that has become a passion”. The family has always been immersed in the world of medicinal plants. For over fifty years, they brewed plants for illegal immigrants. When the ban was lifted, they joined the world of distillers, transforming the former laundry on Grand-Rue 20 into a distillery, behind what is now the drugstore-herbalist’s shop.
Absinthe Persoz
Who : Gaudentia Persoz
Where : Rue Pierre-Dubied 3, 2108 Couvet
Website : absinthelaptite.ch
When absinthe was legalized in 2005, only men emerged from the shadows. For Jean-Michel Persoz, a member of the legalization committee, the history of absinthe has always been linked to women. In his family, it was his grandmother Lucie who distilled absinthe clandestinely. After inheriting the family recipe, he decided to pass the torch to his wife, Gaudentia, who became the first legal distiller in Switzerland, and who today perpetuates a family tradition that goes back generations.
Absinthe Grand
Who : Patrick Grand
Where : Rue des Moulins 1A, 2114 Fleurier
Website : absinthe-grand.com
Patrick has been growing his plants for over thirty years in Fleurier in the Val-de-Travers. From the seed to the semi-drying in the warehouse, everything is controlled and 100% organic, to produce elixirs of exceptional quality.
Distillerie du Val-de-Travers / AbsintheMarket.com
Who : Christophe Racine
Where: Grande Rue 2, 2112 Môtiers
Website : absinthemotiers.com / absinthemarket.com
Christophe almost fell into absinthe as a child! It was his uncle, an absinthe clandestine, who showed him the art of distillation when he was just 5 years old. A demonstration that ignited the fire of a passion that has never left him. Christophe then trained as a drugstore clerk, the perfect place to trade with some of the Vallon’s clandestines, while making his first recipes and experiments. With legalization, Christophe logically opened his distillery in Môtiers, which he has been running successfully ever since.
A few years ago, Christophe and his partner Myriam, along with Mathieu and Esther, opened AbsintheMarket, an online shop featuring absinthes from most of the distillers in the Val-de-Travers. This initiative is raising the profile of absinthe and breathing new life into the Val-de-Travers distilleries.
Absinthe La Vraie
Who: Pierre-André Currit
Where: Le Petit Bayard 141, 2127 Les Bayards
Website : absinthe-la-vraie.ch
Absinthe has run in the Currit family for generations. Pierre-André’s grandfather had a whole notebook of recipes. And when absinthe was finally legalized, Pierre-André launched his distillery and his blue “la Vraie”. Since then, he has been joined by his son Nicolas, who has created “Celle du fils” and “Cann’absinthe”, an absinthe with CBD.
Absinthe Benoit
Who: Yves Benoit
Where: Derrière les Jardins 5, 2112 Môtiers
Website : absinthebenoit.ch
Yves Benoit took over his grandfather’s distillery, when absinthe was still forbidden. He kept the family recipe, which he still produces in its original form: his Traditionnelle. In the summer of 2006, he came out of hiding and officially opened his distillery in Môtiers.
Distillerie Artemisia-Bugnon
Who : Claude-Alain et Karine Bugnon
Where : Grand-Rue 8, 2112 Couvet et Grande Rue 1, 2112 Môtiers
Website : distillerie-artemisia.ch
When asked why he became a distiller, Claude-Alain Bugnon replies “Why not?“ In 2004, he split his activities between the oil industry and distilling absinthe for export. Finally, with the legalization of absinthe on March 1, 2005, he gave up the oil business to devote himself to his distillery.
Absintherie « Celle à Guilloud »
Who : Pierre-André Matthey
Where : Grand-Rue 29, 2114 Fleurier
Website : absinthecelleaguilloud.ch
Based in Fleurier, the distillery was founded by Daniel Guilloud after more than 40 years in hiding. Taken over since 2015 by Pierre-André Matthey, it has been awarded numerous gold medals in international competitions. As a result, Guilloud absinthes have become a benchmark of quality and craftsmanship that endures.
DistAB et Officine de verre
Who : Nicolas Stauffer
Where : Grand-Rue 9, 2108 Couvet
Website : distab.ch
It’s an honor for me to carry on my father’s passion for this beverage. As a key player in its heritage, it’s a pleasure to offer our guests this exceptional setting full of history. Absinthe and its anecdotes during the prohibition period have always aroused my curiosity, and it’s only natural that I should be able to tell the stories I’ve heard many times since my childhood. Tasting Absinthe in an old pharmacy or an unusual cellar? L’Officine de verre offers a surprising experience.
Distillerie Wanner
Who : Romain Wanner
Where : Rue Emer-de-Vattel 2, 2108 Couvet
Website : distillerie-wanner.ch
When his son was born, Romain became interested in what his father really did in his distillery. A chef, then a journalist, he has always been passionate about tastes and flavors. And it was with the determination to pass on the family heritage and the distillery’s reputation to the next generation that he took over Absintissimo at the end of 2022, renaming it Distillerie Wanner. In just over two years, he has succeeded in maintaining the quality of his father’s products, and has even distinguished himself with new recipes and gins.
Distillerie Stillerie
Who : Céline, David et Julien
Where : Rue du Grenier 11A, 2114 Fleurier
Website : stillerie.ch
The story begins at the source… A fountain, three friends and a passion: absinthe! It was during a discussion that they were given their first recipe, the first ingredient in the adventure that would take us to fairyland. A few years and a few trials later, they adjusted and refined the recipe that would become Clairvoyante, and in the process created a second absinthe: Dame blanche.
